STEAK
WITH MISO TRUFFLE BUTTER by CHEF DAN:
Serves
4
INGREDIENTS:
1/2-cup
butter, softened
1/4-cup
miso
2
tablespoons sake
1
teaspoon white truffle oil
2
(12-16-Oz) flank steak, 1-1/2-inch thick
Sea
salt and freshly ground black pepper to taste
DIRECTIONS:
1.
Mash
the butter with miso and sake in a bowl.
2.
Mix
in truffle oil.
3.
Season
steak with sea salt and freshly ground black pepper.
4.
On
a gas grill start with all burners on medium-high.
5.
Then
turn off one or more of the burners to create a hot cool zone.
6.
Pat
the steak dry and grill over the hottest part of the grill.
7.
Rotating
occasionally to create a crust, 2-4 minutes.
8.
Flip
and sear the other side.
9.
Move
the steak to the cooler part of the grill.
10.
Cover
and cook to your desired doneness (5-7 minutes for medium rare.
11.
Let
rest 5-7 minutes, cut steak in half.
12.
Top
each piece with 2 tablespoons of butter and serve.
