MISO
COD OR SALMON WITH SAKE BUTTER SAUCE by CHEF DAN:
Serves
4
INGREDIENTS:
I
large cod or salmon fillet, skin on
4
scallions cut on the bias in 1/4-inch pieces (for garnish)
2
tablespoon butter
MISO
BUTTER SAUCE:
1/3-cup
sake
1/3-cup
mirin
1
cup sugar
1
cup white miss
2
teaspoons whit truffle oil
1
thumb-size grated fresh ginger
DIRECTIONS:
1.
To
prepare the marinate, add Saki and mirin in a skillet and bring to boil.
2.
Boil
for 8-10 minutes.
3.
Reduce
heat to simmer and add remaining ingredients.
4.
Simmer
for 3-4, minutes or until pale caramel color.
5.
Let
completely cool.
6.
Rinse
fish in cold water and pat dry.
7.
In
a Ziploc bag add miso mixture and add fish and refrigerator overnight.
8.
Remove
fish from marinate and rinse in cold water and pat dry.
9.
Reserve
marinate.
10.
In
skillet add butter over medium-low heat when sizzling.
11.
Add
fish to the pan and season with salt and pepper.
12.
Cook
4-5 minutes before turning.
13.
Cook
another 4-5 minutes or until opaque in the middle.
14.
Garnish
with scallions.
15.
Serve
with jasmine rice
