BUTTERMILK CAKE WITH BUTTERMILK GLAZE ENJOY DAN:

             BUTTERMILK CAKE WITH BUTTERMILK GLAZE by CHEF DAN:
Serves 12-14

INGREDIENTS:
2-1/2-cups all-purpose flour
1/4-teaspoon salt
1/2-teaspoon baking soda
1/2-teaspoon baking powder
1 cup butter, softened
2 cups sugar
4 egg whites
2 tablespoon lemon juice
1 teaspoon lemon extract
1 cup buttermilk

DIRECTIONS:   (PRE-HEAT THE OVEN TO 325 DEGREES)
1.   Grease and flour a cake pan with a removable bottom and very large center hole, or tube cake pan.
2.   Sift dry ingredients together.
3.   Cream butter and sugar together.
4.   Add egg whites one a time until just thoroughly incorporated.
5.   Stir lemon juice and lemon extract into buttermilk.
6.   Mix into cake batter just to incorporate.
7.   Pour cake batter into pre-pared cake pan.
8.   Place on a half sheet covered with aluminum foil and bake for 1 hour.
9.   While cake is baking, mix together glaze ingredients.
10.                When cake is done, slowly pour glaze over cake and return cake to oven for 3 minutes.
11.                Remove the oven and let rest 8 minutes.
12.                Then remove from pan and enjoy.

 BUTTERMILK GLAZE:
2 cups powdered sugar
1-1/2-teaspoons baking soda
1/2-cup buttermilk
1/2-cup butter
1 tablespoon light corn syrup
1 teaspoon lemon extract

DIRECTIONS:
Bring the first 5 ingredients to a boil in a Dutch oven over medium-high heat
Boil stirring often, about 4 minutes.
Remove from heat and stir in almond extract.
