INSTANT POT ORZO PASTA WITH MUSHROOMS ENJOY DAN:


               INSTANT POT ORZO PASTA WITH MUSHROOMS by CHEF DAN:
Serves 4

INGREDIENTS:     
1-box RONZONI orzo pasta
3 tablespoons olive oil
1 cup cremini mushrooms, sliced
1 onion, cubed
2 garlic cloves, smashed
1-teaspoon EACH thyme, oregano, and cumin
Kosher salt and freshly ground black pepper to taste
3-cups water
1/2-tablespoon dried parsley
2 tablespoons butter
1/2-cup Parmigiano-Reggiano cheese, grated

DIRECTIONS:
1.   Set Instant Pot to the Saute setting.
2.   Add oil to the Instant Pot and when sizzling.
3.   Add mushrooms and next 6 ingredients.
4.   Saute for 5 minutes.
5.   Turn off Instant Pot.
6.   Add pasta and water.
7.   Close lid and value.
8.   Set time for 7 minutes on low pressure setting.
9.   Depressurize in full by opening value.
10  Carefully remove lid.
11  Stir in parsley, butter and cheese before serving.
