BROCCOLI CARROT SALAD WITH RICE NOODLES ENJOY DAN:


             BROCCOLI CARROT SALAD WITH RICE NOODLES by CHEF DAN:
Serves 4

INGREDIENTS:
1-(8 Oz) package rice noodles
1-head broccoli, cut into florets, and peeled stems cut into rounds
2-multi color carrots
1-scallion, thinly sliced

DRESSING:
2 tablespoons tahini
1 tablespoon sesame oil
2 tablespoons rice vinegar
2-tablespooons water
1-tablespoon pure maple syrup
1-tablespoon EACH soy sauce and fish sauce
A splash of Sriracha
1-tablespoon sesame seeds

DRESSING;
1.   In a bowl whisk together, all dressing ingredients.
2.   Set aside.

DIRECTINS:
1.   In a bowl add rice noodles and pour hot water over noodles and let sit 30 minutes.
2.   Then drain and set aside.
3.   Steam broccoli and carrots in a steaming basket, 3-4 minutes.
4.   In a salad bowl add broccoli, carrots, noodles, and sesame dressing.
5.   Toss to combine
6.   Drizzle with Sriracha and sesame seeds.
