CHICKEN WITH BEET ZOODLES ENJOY DAN:

                   CHICKEN WITH BEET ZOODLES by CHEF DAN:
Serves 2

INGREDIENTS:
2-skinless, boneless chicken breasts, cut into 1/2-inch pieces
2 tablespoons olive, divided
2 beets
4 garlic cloves, crushed
1/2-teaspoon red pepper flakes
Salt and pepper to taste
1/4-cup goat cheese

DIRECTIONS: (PREHEAT OVEN TO 425 F)
1.   (Wear gloves to prevent staining your hands)
2.   Trim off the ends of the beets and peel.
3.   Insert the thinner end into the beet into round blade of the spiralizer.
4.   Spiralizer, keeping it centered.
5.   Using a scissors, cut the noodles into small 6-inch pieces.
6.   Place spiralized beets on a prepared baking sheet.
7.   Season with salt and pepper.
8.   Bake for about 10 minutes.
9.   Add oil, garlic to a skillet over medium-high heat and when sizzling.
10  Season chicken with salt and pepper.
11  Add chicken and sauté for about 4 minutes on each side, or until golden brown.
12  Remove spiralized beets from the oven and place a plate.
13  Add chicken mixture on top.
14  Garnish with goat cheese
