CUBAN INSPIRED MILLET ENJOY DAN:

                      CUBAN INSPIRED MILLET by CHEF DAN:
Serves 4

INGREDIENTS:
1/2-cup raw millet, soaked for 8 hours or overnight
2-cups vegetable broth
1 onion, finely chopped
1 carrot, grated
1 green bell pepper, chopped
3 tablespoons Parmesan cheese
Sea salt and freshly ground black pepper to taste
1 tablespoon olive oil
A handful fresh parsley, chopped

DIRECTIONS:
1.   Bring millet and vegetable broth and dash of salt, to a boil.
2.   Cover reduce heat to simmer and simmer for 20-25 minutes, or until millet is tender and the water is absorbed.
3.   In a skillet add olive oil and when sizzling
4.   add onion and next 5 ingredients, to the hot millet.
5.   Stirring thoroughly to break up the millet grains, like mash potatoes.
6.   Top with fresh parsley.
