BAKED FISH WITH GRAPE TOMATO SAUCE ENJOY DAN:

             BAKED FISH WITH GRAPE TOMATO SAUCE by CHEF DAN:
Serves 4

TOMATO SAUCE:
1 tablespoon olive oil
1 onion, chopped
3 garlic cloves, smashed
12 grape tomatoes, halved
1 tablespoon fresh basil
1 teaspoon EACH cayenne pepper, chili powder, garam masala, and sugar
1 tablespoon lemon juice
Sea salt and freshly ground black pepper to taste

FISH:
1-1/2-pounds white fish (7 Oz each) cod fillets, flounder, tilapia or sole
1/2-cup white wine
3 tablespoons butter, melted
1 tablespoon lemon juice
2 tablespoon fresh cilantro, minced
Sea salt and freshly ground black pepper to taste

DIRECTIONS:     (HEAT OVEN TO 375 DEGREES)
1.    Heat oil in a skillet over medium-low heat when sizzling.
2.   Add onions and garlic and sauté for 5 minutes.
3.   Add tomatoes, cilantro, basil, cayenne, chili powder, gram marsala, and a splash of salt.
4.   Cook stirring until tomatoes thickened about 10 minutes.
5.   Remove from skillet; stir in lemon juice.
6.   Rinse fish under gently running cold water.
7.   Pat dry with paper towels.
8.   Pour wine in a baking dish, lay fish in wine and spoon melted butter over fish.
9.   Sprinkle with salt and pepper and lemon juice.
10.                Bake until fish flakes easily, about 10 minutes.
11.                Remove fish to a platter and spoon tomato sauce over the fish.
12.                Sprinkle with cilantro.
