COUSCOUS THAT YOU HAVE TO TRY ENJOY DAN:

                                  COUSCOUS SERVED COLD by CHEF DAN:
Serves 4

INGREDIENTS:

2 cups couscous
2 tablespoons grape-seed oil
2 cups warm water
2 cups orange juice
3 tablespoons lemon juice
12 cherry tomatoes, halved
1 red onion thinly sliced
3 baby cucumbers or 1 English cucumber, thinly sliced
1 cup mixed raspberries and blueberries
2 bell peppers green and yellow, thinly sliced
A handful of fresh basil
Salt and pepper to taste

DIRECTIONS:  

1.    Add all liquid ingredients to a large bowl.
2.    Add the tomatoes, red onion, cucumbers, blueberries, bell peppers and salt and pepper to taste.
3.    Add couscous and mix well.
4.    Let sit for 1 hour and stir every so often, until it fluffs up.
5.    The couscous can sit for a few hours or in the refrigerator overnight.
6.    Top with fresh basil.
