ZUCCHINI NOODLES WITH SPICY PEANUT SAUCE ENJOY DAN:


ZUCCHINI NOODLES WITH SPICY PEANUT SAUCE by CHEF DAN:
Serves 4

INGREDIENTS:
2-tablespoons olive oil
2-zucchini, spiralized
1-carrot, spiralized
1-red bell pepper, cut into thin strips
1/2-cup cilantro, diced
3-scallions, bias cut into 1/2-inch slices

SPICY PEANUT SAUCE:
1-gatlic clove, minced
4 tablespoons peanut butter
2-tablespoon EACH lime juice, & soy sauce
1-tablespoon Sriracha chili sauce
1/2-teaspoon ground ginger

DIRECTIONS:
1.   In a bowl, whisk together garlic & all peanut sauce ingredients.
2.   Set aside.
3.   In a skillet heat oil over medium heat & when sizzling.
4.   Add spiralized zucchini, carrots and bell pepper.
5.   Stir-fry for 2 minutes, stirring constantly.
6.   Remove zoddles & place in a bowl.
7.   Add scallions, and peanut sauce.
8.   Toss until everything is coated well.
