POUCHED EGG ON AVOCADO TOAST ENJOY DAN:


                 POUCHED EGG ON AVOCADO TOAST by CHEF DAN:
Serves 2

INGREDIENTS:
 1-avocado cut in-half, pit removed, and pulp scooped out with a spoon
2-pouched eggs
2-slices, crusty bread 3/4-inch thick
2-tablespoons apple cider vinegar
1/4-teaspoon red pepper flakes
1-tablespoon fresh snipped chives, chopped
Kosher salt and freshly ground black pepper to taste

DIRECTIONS:
1.   In a bowl, mash avocado with a fork & add chive.
2.   Set aside.
3.   Toast bread to way you like it.
4.   Divide avocado spread on the toast.
5.   Heat a pot of water over high-heat then simmer.
6.   Add vinegar and swirl the water.
7.   Put egg in a small bowl & gently place eggs in swirling water.
10  Poach for about 3-4 minutes.
11  Place poach eggs on top of the avocado toast.
12  Sprinkle with chopped chives, red pepper flakes, salt & pepper.
