PALEO APPLE CINNAMON PANCAKES ENJOY DAN:

         PALEO APPLE CINNAMON PANCAKES by CHEF DAN:
Serves 2

INGREDIENTS:
2 eggs, whisked
2 bananas, mashed
1 peeled apple
1/2-cup almond meal
1/3-cup tapioca flour
1/2-teaspoon baking powder
1-1/2 teaspoons-cinnamon
1 peeled apple, diced small
1/2-teaspoon nutmeg
1 teaspoon vanilla extract
1-1/2- teaspoons coconut oil, or as needed

DIRECTIONS:
1.   Mash the 2 bananas with a fork.
2.   Whisk 2 eggs in a bowl, add vanilla extract whisk to combine.
3.   Combine almond flour, tapioca flour, baking soda and cinnamon and a splash of salt in a bowl.
4.    Core and dice apple.
5.   Add egg mixture to almond flour mixture.
6.   Mix until just combined.
7.   Add water until batter desired thickness.
8.   Set aside and let rest 15 minutes.
9.   Heat a thin layer of coconut oil in a skillet over medium-high heat.
10.                Pout the pancake in-keeping the pancakes no wider than the spatula.
11.                Cook until bubbles form and edges are dry, 3-4 minutes.
12.                Flip and cook until browned on the other side, 2-3 minutes.
13.                Repeat with remaining batter.
