ASIAN
CHOPPED SALAD WITH ARTICHOKE HEARTS by CHEF DAN:
Serves
4
INGREDIENTS:
2-tablespoon
lemon juice
1-tablespoon
sesame oil
1-teaspoon
dried tarragon
4
cups prepackaged Asian chopped salad (from Costco)
1
(14 Oz) can artichoke hearts, halved lengthwise and sliced
2
hard boiled eggs, chopped
1/2-sweet
onion, sliced in thin rings
Sea
salt and freshly ground black pepper to taste
DIRECTIONS:
1.
In
a bowl whisk lemon juice, oil, tarragon, season with salt and pepper.
2.
Add
Asian chopped salad mixture, artichoke hearts, onion and eggs.
3.
Toss
to coat.
