YELLOW LENTILS WITH GOAT CHEESE ENJOY DAN:

            LENTIL SALAD WITH GOAT CHEESE by CHEF DAN:
Serves 4

INGREDIENTS:
1 cup yellow lentils
3 cups veggie broth
1 bay leaf
1 carrot, finely diced
1-cup jicama, diced
1 red pepper, diced
1/2-teaspoon EACH dried thyme, tarragon, and lemon pepper
2 garlic cloves, minced
1 teaspoon caramelized onion mustard
1 teaspoon agave nectar
2 tablespoons lemon juice
2 tablespoon olive oil
1/4-cup goat cheese

DIRECTIONS:
1.    Combine lentils, broth and bay leaf in a sauce-pan.
2.   Bring to a boil; turn down heat and simmer for about 30 minutes.
3.   Remove bay leaf and strain and let cool.
4.   In a bowl, combine all reaming ingredients except goat cheese.
5.   Add cooked lentils and toss to combine.
6.   Crumble the goat cheese over the top of the salad.
7.   Season with sea salt and freshly ground black pepper.
