QUINOA SALAD WITH WATERMELON HONEY DEW MELON AND GRAPES

Serves 4
INGREDIENTS:
1
cup red quinoa, rinsed
3
cups watermelon, cubed
2
cups seedless, green grapes, rinsed
3-cups honey dew melon, cubed
1/2-red bell pepper, seeded and
cubed
1/2-cup feta cheese
1/4-cup fresh basil, chopped
1/2-cup walnuts
3
tablespoon olive oil
1
tablespoon balsamic vinegar
2
tablespoons lemon juice
1-shallot, minced
2
teaspoons honey
DIRECTIONS:
1. Cook quinoa according to package
directions:
2. Combine watermelon, honey dew melon, grapes, bell pepper, feta, basil,
and walnuts in a bowl.
3. Whisk olive oil, balsamic vinegar, lemon juice, shallot
and honey in a bowl
4. Add
quinoa to bowl with watermelon mixture, pour dressing
over.
5. Stir to combine.
