STIR FRY PORK WITH RICE NOODLES AND PEANUT
SAUCE by CHEF DAN:

PEANUT
SAUCE:
1
(13.5) can coconut milk
1/4-cup
Thai red or massaman curry paste
3/4-creamy
peanut butter
1/3-soy
sauce
3
tablespoon olive oil
3
tablespoon honey
1/2-teaspoon
fish sauce
2
tablespoon apple cider vinegar
4
garlic cloves, sliced
1
thumb-size fresh ginger, thinly sliced
3
tablespoon hoisin sauce
1-1/2-pound
pork cut into thin stripes
2
tablespoon grape-deed oil
8
ounces rice noodles
Grated
carrots, chopped scallions, dry roasted peanuts, and chopped cilantro
DIRECTIONS:
Cook
rice noodles according to package directions>
1.
In
a blender, blend together coconut milk and next 10 ingredients.
2.
Blend
until smooth.
3.
Marinate
the pork in the sauce for a few hours or overnight in the refrigerator.
4.
Heat
the oil a wok over medium-high heat, when sizzling.
5.
Add
the meat and stir-fry until browned on the outside.
6.
Remove
pork and set aside.
7.
Add
marinate and noodles to the wok and bring to a boil.
8.
Reduce
heat add meat and simmer for 10 minutes.
