SPICED
RUBBED GRILLED SALMON by CHEF DAN:
Serves

DIRECTIONS:
2
(7 Oz) salmon fillet
RUB:
1
tablespoon EACH whole coriander seeds, cumin, dill, yellow mustard, and black
peppercorns.
2
tablespoon brown sugar
1
tablespoon chili powder
2
tablespoons smoky paprika
1/4-teaspoon
EACH dried thyme, basil, oregano, cinnamon, and dry mustard
1/2-teaspoon
kosher salt
Olive
oil for grilling
DIRECTIONS:
1.
In
a dry fry pan over medium-heat add seeds, and toast the seeds.
2.
Shake
the pan, until aromatic, 3-5 minutes, don’t burn.
3.
In
a spice grinder coarsely grind the seeds.
4.
Transfer
to a bowl: add seeds, sugar, chili powder, salt and all herbs.
5.
Coat
salmon with olive oil and rub spice mixture
into flash side of the salmon.
6.
Let
stand 30 minutes.
GRILLING:
1.
Pre-heat
grill on medium-high (300-325 degrees).
2.
Oil
the grill.
3.
Cook
salmon for 3-3.5 minutes on each side, total of 7 minutes.
4.
Don’t
overcook; salmon is best served medium-rare.
5.
Is
correctly cooked when it fells firm, but with a little give when you press
down.
6.
Serve
with rice.
