PASTA WITH 3 CHEESES AND BELL PEPPERS ENJOY DAN:


ORZO WITH 3 CHEESES AND 2 RED BELL PEPPER by CHEF DAN:

Serves 4

 

INGREDIENTS:

1.   3 tablespoon butter

2.   2  roasted red bell peppers, cut into strips

3.   3/4-pound orzo

4.   3/4- teaspoon kosher salt

5.   1/2-cup feta cheese, crumbles

6.   1/2-cup mozzarella cheese, grated

7.   1/4-cup Parmesan cheese, grated

8.   A pinch of fresh  ground black pepper

 

DIRECTIONS:

1.   Heat the broiler and spray a baking dish, with Pam.

2.   Over an open flame blacken bell peppers, and when black place in a paper bag.

3.   When cool remove skin, set aside.

4.   In a pot of salted water add the orzo and cook according to package directions.

5.   Drain and return the orzo to the pot.

6.   Toss the pasta with the butter, salt, the feta cheese, mozzarella cheese and 3 tablespoons Parmesan cheese, blackened  bell pepper strips, and black pepper.

7.   Transfer pasta to the baking dish.

8.   Top with remaining Parmesan cheese.

9.   Place under the broiler and broil for 3-4 minutes.

10.                Serve with additional Parmesan cheese.
