LIGUINE WITH TOMATOES AND MUSHROOMS ENJOY DAN:


LINGUINE WITH TOMATOES AND MUSHROOMS by CHEF DAN:

Serves 3-4

 

INGREDIENTS:

8     ounces linguine

1     tablespoon butter

 2-cups sliced mushrooms

1     onion, chopped

2     garlic cloves, minced

1      Whole fresh tomato, diced

1     (14,5 Oz) can diced tomatoes

      1/4-cup fresh basil, chopped, divided

      1-tablespoon fresh thyme

      1/2-cup red wine

      1/4- cup Parmesan cheese

 

DIRECTIONS:

1.   Cook linguine according to package directions.

2.   Drain and set aside.

3.   Melt butter in a skillet over medium-high heat.

4.   Add mushrooms and onion and sauté for 5 minutes.

5.   Add garlic and cook 1 minute.

6.   Add tomatoes, half the basil, thyme and salt and cook 5 minutes, stirring occasionally.

7.   Add wine and cook 5 more minutes.

8.   Stir in the linguine into the tomato sauce, stir to combine.

9.   Serve with Parmesan cheese and reaming basil.
