CRISPY WHITE FISH ENJOY DAN:


          CRISPY TILAPIA WITH LEMON DILL SAUCE by CHEF DAN:

Serves 4

 

INGREDIENTS:

4 (4 Oz) fillets tilapia or cod, cat fish, or Pollock

2 egg whites, lightly beaten

1/2- cup Panko (Japanese bread crumbs)

1/2- cup cornmeal

1 teaspoon smoky paprika

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon black pepper

1/2-teaspoon kosher salt

1/4-cup mayonnaise

2 tablespoons dill pickles, finely chopped

2-teaspoon lemon juice

1 teaspoon fresh dill, finely chopped

 

DIRECTIONS:       (PRE-HEAT BROILER TO HIGH)

1.   In a shallow dish combine egg whites.

2.    Combine next 6 ingredients in a bowl.

3.   Sprinkle fish evenly with pepper and salt

4.   Dip each fillet into egg whites.

5.   Dredge into Panko mixture.

6.   Place on a broiler pan coated with Pam.

7.   Broil for 4 minutes.

8.   Combine mayonnaise, pickle, lemon juice, and dill, and lemon wedges.

9.   Serve fish with the sauce and lemon wedges.
