MISO WITH UDON ENJOYDAN:


                  MISO BUTTER WITH UDON by CHEF DAN:

Serves 2

 

INGREDIENTS:

 

(7 Oz) package unon noodles

2 scallion, finely sliced

1 garlic clove, minced

1 tablespoon mirin

1 tablespoon sake

1 tablespoon vegetarian broth

2 tablespoons butter

 

SPICES:

2 tablespoon white miso paste

1 tablespoon soy sauce

1 tablespoon mirin

1 tablespoon sake

 

PREPARATION:

1.   In a bowl mix spices in 2-1/2-cup of water (miso, soy sauce, mirin, broth, sake, broth, and garlic.

2.   Heat oil in a sauce pan add butter.

3.   When butter is almost melted, add soup mixture, and bring to a boil.

4.   Add udon and bring to a boil

5.   Reduce heat and simmer for 1 minute.

6.   Remove from heat.

7.   Serve soup in two bowls and top with scallions.
