SYRUP FOR PANCAKES OR ICE CREAM WHATEVER ENJOY DAN:


MEYER LEMON SIMPLE SYRUP by CHEF DAN:

Makes 4-5 cups

 

INGREDIENTS:

 

8 Meyer’s lemons

Zest from 4-6 Meyers lemons

4 cups sugar

2 cup freshly squeezes lemon juice

 

DIRECTIONS:

 

1.  Using a vegetable peeler, peel the rind off the Meyer lemons.

2.  Try not to get the pith (white part)

3.  In a sauce pan over medium-heat, combine zest, sugar, and lemon juice.

4.  Stirring until sugar is dissolved.

5.  Let mixture reach a boil, then reduce the heat to low and simmer for 2-3 minutes.

6.  Let cool and then strain out the zest.

7.  Cover and refrigerate until needed.

8.  Will keep in the refrigerator for several months.
