PORK
RIBS AND SWEET POTATO FOR DOT’S DINNER by CHEF DAN:
Serves

INGREDIENTS:
3
pounds pork country style ribs
2
cups chicken broth
1
(14.5 Oz) can diced tomatoes, with green chilies
2
teaspoon chipotle chili powder
1
teaspoon EACH dried oregano, cumin, sage and smoky paprika
1/2-teaspoon
EACH sea salt and freshly ground black pepper
1
onion, chopped
1
bell pepper, cored and thinly sliced
4
garlic cloves, minced
2
sweet potatoes cut into 1-inch cubes
CORNBREAD:
1/2-cup
cornmeal
1/2-cup
all-purpose flour
2
teaspoons sugar
1
teaspoon baking powder
1/8-teaspoon
sea salt
2
tablespoon cold butter, cut into small pieces
1/2-cup
milk
2
tablespoons lime juice
2
tablespoons fresh cilantro, chopped
DIRECTIONS:
1.
Coat
the crock-pot with non-stick cooking spray.
2.
Season
pork with chili powder, oregano, cumin, sage, paprika, and 1/2-teaspoon salt
and pepper.
3.
Place
in crock-pot.
4.
Add
onion, garlic, sweet potato, diced tomatoes and bell pepper.
5.
Pour
broth over the top.
6.
Cover
and cook on low for 8 hours.
7.
Meanwhile
whisk together cornmeal, flour, sugar, salt and baking powder.
8.
Cut
in butter until mixture is coarse, stir in milk, and fold in cilantro.
9.
1-hour
before serving mix in butter, and lime juice,
10.
Then
drop in cornbread batter in heaping tablespoon on top of ribs, and cook for 1
hour.
