PEANUT
BUTTER CUPS FOR THE LADIES AT THE SOUP KITCHEN

INGREDIENTS:
2
(12 Oz) packages semisweet chocolate chips
2
cups peanut butter, crunchy or smooth
1
cup powdered sugar
1
teaspoon vanilla extract
1/4-cup
butter
2
tablespoon vegetable oil
DIRECTIONS:
1.
Pour
the chocolate chips, vanilla, butter and oil in a microwave-safe bowl.
2.
Microwave
at 50% power, stirring often for 1-2 minutes.
3.
Coat
a cup muffin tin or muffin cups with cooking spray.
4.
Pour
a tablespoon chocolate mixture into each cup.
5.
Place
muffins into the refrigerator so that chocolate hardens.
6.
Combine
the peanut butter and powder sugar in the microwave for 30-40 seconds.
7.
Spoon
1 teaspoon of melted peanut butter mixture into each muffin cup.
8.
Top
with another tablespoon chocolate.
9.
Chill
in refrigerator for 30 minutes.
