ROASTED ZUCCHINI ENJOY DAN:


                     ROASTED ZUCCHINI by CHEF DAN:
Serves 4

INGREDIENTS:
3-zucchini, each cut in half across the middle, & then quarter lengthwise
1-bell pepper, cored and seeds & cut into stripes
2-garlic cloves, minced
1-tablespoon olive oil
1/2-teaspoon EACH Old Bay, & Herbs de Provence
kosher salt
freshly ground black pepper

DIRECTIONS: (PREHEAT OVEN TO 450 F)
1.   Toss zucchini, bell pepper & garlic in a Ziplock bag with oil and spices.
2.   Season with salt & pepper to taste.
3.   Squeeze to coat.
4.   Spread on a prepared baking sheet.
5.   Place in preheated oven.
6.   Roast for 8-12 minutes or until zucchini is starting brown on the edges.
7.   Taste & season with salt & pepper.
