ROASTED TOMATO SALAD WITH GOAT CHEESE ENJOY DAN:


ROASTED TOMATO SALAD WITH GOAT CHEESE by CHEF DAN:
Saves 4

SALAD:
3-tomatoes
10-ounce mixed greens
3-ounces goat cheese
1/2-cup walnuts, coarsely chopped
2-hard boiled eggs

TOMATOES; (PREHEAT OVEN TO 300 F)
1.   Halve tomatoes & season with salt and pepper.
2.   Place tomatoes on a prepared baking sheet & roast for 20 minutes.
3.   Remove oven a slip of the skins & brush lightly with oil.
4.   Return tomatoes to thee oven and roast for 1-hour or until brilliant, burnished color.

VINAIGRETTE:
2-tsblespoons honey
1-1/2-tablespoon Dijon mustard
3-tablespoon red wine vinegar
1-1/2-WLLA WALLA sweet onion, finely chopped
1/4-teaspoon freshly ground black pepper
1/2-teaspoon sea salt
5-tablespoons vegetable oil

  FOR VINAIGRETTE:
1.    In a Mason jar add honey, & next 6 ingredients.
2.   Add oil and shake Mason jar vigorously to blend.

SALAD:
1.   Place greens in salad bowl, drizzle with about half of the vinaigrette.
2.   Toss to combine.
3.   Add a little more vinaigrette as desired and toss again.
4.   Divide greens onto plates, add tomatoes, then sprinkle with walnuts, sliced hard boiled eggs & goat cheese.
