PEACH CHUTNEY ENJOY DAN:


                           PEACH CHUTNEY by CHEF DAN:
makes 3 cups

INGREDIENTS:
2-tablespoons olive oil
1-tablespoon mustard seeds
1/2-onion, finely diced
1-sweet red pepper, seeded & slice into 1/4-inch strips
1-cup apple cider vinegar
1-cup packed brown sugar
1/3-cup crasisins
1-teaspoon EACH garam masala, & Colombo curry
2-teaspoon fresh grated ginger
2-garlic cloves, grated
seeds from 3 crushed cardamom pods
5-peaches, pitted & cut into small pieces

DIRECTIONS:
1.   Add oil to a skillet over medium-high heat & when sizzling.
2.   Add mustard seeds a& let them pop for 20-30 seconds.
3.   Add onion, & sauté for 4 minutes.
4.   Add red pepper and cook 30 seconds.
5.   Stir in vinegar, and next 7 ingredients:
6.   Bring mixture to a boil over high heat.
7.   Mix in peaches & return to a boil.
8.   Reduce heat & simmer rapidly, stirring often until chutney looks jimmy & is reduce to about 3 cups, about 1 minute.
