KOREAN TURKEY LETTUCE WRAPS ENJOY DAN:


                          KOREAN TURKEY LETTUCE WRAPS ENJOY DAN:
Serves 4

INGREDIENTS:
2-heads Boston lettuce, leaves washed and dried
1-pound ground turkey
6-radishes, thinly sliced
1-cup BRITTS Kimchi
Pickled carrots, (recipe below)
Pickle cucumber, (recipe below)
Gochujang Aioli (recipe below)

GROUND TURKEY:
1-tablespoon olive oil
2-tablespoons soy sauce
1-tablespoon EACH brown sugar, mirin, & hoisin sauce
1-teaspoon EACH sesame oil, gochujang & red chili paste
1/4-teaspoon EACH garlic, onion, & ginger powder
2-scallions, finely chopped

PICKLED CARROTS:
3-carrots, grated
3/4-cup warm water
1/2-cup apple cider vinegar
1-tablespoon sugar
1-1/2-teaspoons Kosher salt

PICKLED CUCUMBER:
1-cucumber, grated
2-tablespoon + teaspoon granulated sugar
1-tablespoon Kosher salt

GOCHUJANG AIOLI:
1/3-cup Mexican sour cream
1/4-cup mayonnaise
1-1/2-tablespoon Gochujang
1-gralic clove, minced
1/4-teaspoon EACH garlic powder, paprika & Kosher salt

TURKEY DIRECTIONS:
1.     Combine soy sauce & next 9 ingredients in a bowl.
2.     Heat oil in a skillet over medium-high heat & when sizzling.
3.     Add turkey & shallot’s, breaking turkey into small pieces.
4.     Cook until just cooked through then ADD sauce & cook 2 minutes.
5.     Remove from heat.
CARROTS:
1.     Combine warm water, vinegar, sugar & salt.
2.     Whisk together until sugar & salt are dissolved refrigerate for 1 hour.
3.     Place carrots in a Mason jar & pour Vinegar mixture over.
4.     Refrigerate for a few weeks
CUCUMBERS:
1.     Mix cucumber, sugar & salt; refrigerate for 1 hour.
GOCHUJANG:
Mix all ingredients together & refrigerate until needed.

ASSEMBLY:
1.     Place Boston lettuce Korean Turkey, radish, Kimchi, pickled carrots, pickled cucumbers, & Gochujang aloli, in bowl family style on the table.
2.     Let everyone build their own lettuce wraps to their liking.
