SWEET POTATO FRIES ENJOY DAN:

                     FANTASTIC SWEET POTATO FRIES by CHEF DAN:
Serves 6-8

INGREDIENTS
3 sweet potatoes
2 tablespoons olive oil
1 teaspoon sea salt
1/2-teaspoon EACH chipotle powder, smoked paprika, Gramm masala, and creole seasoning + a pinch merquen (optional)

DIRECTIONS: (PREHEAT OVEN TO 500 F)
1.   Place roasting baking sheet lined with foil in the oven.
2.   Peel and cut sweet potatoes into wedges, cut off the ends
3.   Cut in-half lengthwise, then cut in-halve crosswise.
4.   Or you can cut peeled sweet potatoes with a mandolin.
5.   In a bowl toss with oil salt and spices.
6.   Use your hands to mix well.
7.   Spread out onto pre-heated baking sheet.
8.   Spread the sweet potatoes out into a single layer.
9.   Bake for 20-25 minutes.
10  After the first 10 minutes, remove and using tongs and flip S.P.
11  Return to oven and 12-15 minutes more.
12  The browner they are the crisper they will be.
