PAN SEARED PETITE SIRLION STEAK FOR THE BOYZ by CHEF DAN:
Serves 6

INGREDIENTS: (PREHEAT OVEN TO 450 F)
Allow steaks to rest at room temperature for 30-60 minutes.
6-(10 Oz) petite sirloin steak
Trim and season steaks with coarse salt or garlic powder, or any way you want.
In a cast-iron skillet over medium-high heat add 2 tablespoon grape seed oil.
When good and hot.
Sear on both sides 2-3 minutes, sear to the final color you want.
Transfer to the preheated oven.
Now comes the variables, how thick is the steak, how long did you sear.
It took me 7 minutes to get to 150 f (medium).
Let rest 5 minutes.
Top with a slice of garlic and butter on top.
COOK BY TEMPERATURE NOT BY TIME ONLY.

INTERNAL TEMPERATURE:

EXTRA RARE 115 120 F
RARE 125 130 F
MEDIUM 130-140 F
WELL 150-155 F
