SOUTHERN JOHNNY CAPES ENJJOY DN:


                                           SOUTHERN JOHNNY CAKES by CHEF DAN:
Serves 4

INGREDIENTS:
2 cup fine-ground yellow or white cornmeal
1 teaspoon baking powder
1 tablespoon sugar
1/2-teaspoon salt
2 egg, lightly beaten
1 cup butter milk or coconut milk
2 teaspoon vanilla extract
1 tablespoon butter melted
Vermont pure maple syrup

DIRECTIONS:
1.   In a bowl, combine the cornmeal, and next 3 ingredients:
2.   Whisk in eggs, and next 3 ingredients.
3.   Coat a skillet with Pam and heat over medium-heat.
4.   Drop about 1/4-cup of the batter into the skillet and cook 2-3 minutes per side or until golden brown.
5.   Serve with warm maple syrup and or fresh raspberries.
