SKY ROOT FARM SAUCY VEGETABLES STIR FRY ENJOY DAN


                    SKY ROOT FARM SAUCY VEGETABLE STIR FRY by CHEF DAN:
Serves 4

INGREDIENTS:
1 cup chicken broth
2 tablespoon grape-seed oil
1/4-dry roasted peanuts

 SAUCY INGREDIENTS:
2 tablespoon light soy sauce
2 tablespoons orange marmalade
1 garlic clove minced
1-teaspoon sriracha
1 thumb-size fresh ginger grated

VEGETABLES:
2 carrots thinly sliced
1 fennel bulb thinly sliced
2 tomatoes sliced into chunks
2 onions cut into chunks
1 bunch parsley
1 bell pepper thinly sliced
8 cremini mushrooms sliced

DIRECTIONS:
1.    Whisk together all saucy ingredients in a bowl.
2.    Set aside.
3.    Heat the oil in a wok over medium-high heat and when sizzling.
4.    Add the vegetables
5.    Stir-fry until they tender-crisp.
6.    Add broth to the wok.
7.    Cook and stir until the mixture boils.
8.    The last-minute pour in saucy mixture.
9.    Sprinkle with dry roasted peanuts.
10. Serve with jasmine rice or noodles.
