GRILLED SHRIMP ZUCCHINI AND TOMATOES ENJOY DAN:


             GRILLED SHRIMP ZUCCHINI AND TOMATOES by CHEF DAN:
Serves 4
(Use a steel grill. It perforated design to bring food in contact with flame to impart, a delicious, Smokey flavor without the risk of losing them to the fire)

INGREDIENTS:
2 garlic cloves, finely grated
1 tablespoon EACH oregano, chopped, and thyme
3/4-teaspoon sea salt
1/8-teaspoon red pepper flakes
3 tablespoon olive oil
2 zucchinis sliced into 1/4-inch rounds
1-pint cherry tomatoes
4 pita pockets
1 cup crumbled feta

SPECIAL EQUIPMENT:
A steel grill basket.

DIRECTIONS:
1.    Preheat a grill over high-heat.
2.   Whisk together garlic and next 5 ingredients in a bowl.
3.   Add shrimp and zucchini and tomatoes; toss to coat.
4.   Brush wire basket with oil, then add shrimp mixture.
5.   Arrange in an even layer.
6.   Place steel   grill on the grill and cook, turning often until the shrimp is fully cooked through, and zucchini and tomatoes are lightly charred.
7.   Cook for about 6-8 minutes.
8.   Meanwhile, grill pita just until warm and toasted.
9.   Transfer shrimp mixture to a bowl and toss until coated with tomatoes juices.
10  Divide among plates and top with feta.
11  Serve with pita alongside.
