RADICCHIO SALAD ENJOY DAN:

                       RADICCHIO SALAD by CHEF DAN:
Serves 2

INGREDIENTS:
1 tablespoon fresh snipped chives, chopped
3 tablespoon red wine vinegar
2 tablespoons water
1/2-teaspoon EACH oregano, thyme, and crushed red pepper flakes
1-1/2-teaspoon Dijon mustard
1/2-teaspoon olive oil
2 teaspoons pure maple syrup
1 cup spinach
1 head torn radicchio
1 tablespoon feta cheese
1 granny smith apple. Unpeeled and cut crosswise into ribbons
1 onion. (1/4-inch thick) sliced, into rings
2 tablespoon dry roasted peanuts

DIRECTIONS:
1.   Combine first 9 ingredients in a jar; cover tightly and shake vigorously.
2.   Combine spinach, and next 4 ingredients in a bowl.
3.   Pour vinegar mixture over salad; toss gently.
4.   Top with roasted peanuts.
