STUFFED JALAPENOS WITH CAYANNE ENJOY DAN:


SCREAMING STUFFED JALAPENOS WITH CREAM CHEESE by CHEF DAN:

Makes 12

 

INGREDIENTS:

12 jalapenos peppers

1/4-cup onion, minced

1/4-cup fresh cilantro, chopped

3/4-cup cream cheese

1-1/2-teaspoon cayenne pepper

1-1/2-teaspoon chili powder

1 teaspoon dried oregano

1 teaspoons kosher salt (more or less to taste)

4 tablespoon jack cheese, cut into long batons

 

DIRECTIONS:  (PRE-HEAT OVEN TO 375 DEGREES)

1.   Slice jalapeños in half lengthwise.

2.   Scrape out the seeds and ribs from each jalapeño.

3.   Mix together all the filling except the jack cheese.

4.   Pack the filling into the pepper and nestle a baton of jack cheese onto the filling of each one.

5.   Arrange the peppers on a foil lined baking sheet.

6.   Bake for 20-30 minutes, or until cheese is bubbly and lightly browned, and peppers are cooked.

7.   Allow to cool before serving.
