PATTY PAN SQUASH ENJOY DAN:


PATTY PAN SQUASH BAKED IN THE OVEN by CHEF DAN:

Serves 4     (yes you can eat the skin)

 

INGREDIENTS:

2 medium patty pan squash, quarter and seeds removed if desired

2-3 tablespoon grape-seed oil

2 whole garlic clove,

1 shallot halved

2 tablespoon Italian seasoning

Sea salt and ground black pepper to taste

 

DIRECTIONS:      (PRE-HEAT OVEN TO 425 DEGREES)

1.    Toss oil. Squash, garlic, shallot, Italian seasoning, and salt and pepper, in a bowl, combine thoroughly.

2.   Spread on a baking sheet in a pre-heated oven.

3.   Bake 18- 20 minutes or until tender
