CASSEROLE WITH SWEET POTATOES AND APPLES ENJOY DAN


        BAKED SWEET POTATOE,  APPLE CASSEROLE by CHEF DAN:

Serves 6

 

INGREDIENTS:

3 sweet potatoes, peeled and cut into 1-inch dice

2 tablespoon olive oil

Kosher salt and ground black pepper to taste

3 granny Smith apples, peeled and sliced

1/2-cup maple syrup

1/2-cup brown sugar

1/2-cup butter

1/2-teaspoon cayenne pepper

1/2-teaspoon cinnamon

1 tablespoon lemon juice

1 cup coarsely chopped walnuts.

 

DIRECTIONS:      (PRE-HEAT OVEN TO 350 DEGREES)

1.   Combine apple slices, maple syrup, brown sugar, butter, and lemon juice in a sauce pan.

2.   Cook over medium-low heat until apple are tender, season with salt, and pepper.

3.   In a bowl toss the sweet potatoes generously with olive oil, salt, cinnamon and cayenne.

4.   Layer potatoes and apples in 4 layers in a buttered 2-quart casserole dish.

5.   Beginning with potatoes, and ending with apples

6.   Top with chopped walnuts.

7.   Place in pre-heated oven, and bake for 30-45 minutes.
