FORBIDDEN RICE, QUINOA AND ORANGES ENJOY DAN:


FORBIDDEN RICE QUINOA AND MANDARIN ORANGES by CHEF DAN:

Serves 4        VEGAN

 

INGREDIENTS:

2 thyme springs, divided

2 cups vegetables broth, divided

1 cup water

1 cup forbidden rice

1 cup quinoa

4 mandarin oranges,

Juice of 2-3 mandarin oranges

1 tablespoon olive oil

2 scallions, green parts, thinly sliced on the bias

Sea salt and freshly ground black pepper

 

DIRECTIONS:

1.   In a stock-pot bring 1 cup of broth, 1 cup of water and 1 thyme spring, and a pinch of salt to a boil.

2.   Add Forbidden rice, cover and reduce heat and simmer for 30 minutes.

3.   Meanwhile in another stock-pot add 1 thyme spring, 1 cup of broth and bring to a boil.

4.   Add quinoa, a pinch of salt, reduce heat and simmer for 15 minutes

5.   In a bowl add the juice of 2-3 mandarin oranges enough for 1/2-cup.

6.   With a sharp knife, cut and peel the white pith from the mandarin oranges.

7.   Separate the segments, and place in a bowl.

8.   Whisk olive oil into bowl of mandarin juice, season with salt & pepper.

9.   Add mandarin sections, Forbidden Rice, Quinoa, and scallions.

10.                Toss gently to coat.
