NOW WE ARE COOKING TOMATILLOS COOKED IN STEEL PAN ON THE GRILL ENJOY DAN:


                      DAN’S TOMATILLO SAUCE by CHEF DAN:
Makes 2 cups

INGREDIENTS:

1 1/2-pounds tomatillos, width papery husk removed
2 jalapenos,
3 garlic cloves, unpeeled
2/3- cup green onion tops
1/2-cup cilantro
1 tablespoon lime juice
2 tablespoons olive oil
1/2-teaspoon brown sugar
1-1/2-teaspoon kosher salt
1/4-teaspoon freshly ground black pepper

DIRECTIONS:
1.   Turn barbeque to medium-high.
2.   In a bowl, add tomatillos and jalapenos with 2 tablespoon olive oil.
3.   Transfer the mixture to a perforated steel grill pan.
4.   Place directly on the flame on the barbeque.
5.   Add more oil while cooking to get that flame going.
6.   When they are blackened take off the grill and put into a paper bag.
7.   When cool; take off the blackened part.
8.   Add to a blender with all other ingredients.
