DIET WITH CABBAGE SOUP ENJOY DAN:


               THREE DAY CABBAGE SOUP DIET by CHEF DAN:
Makes 20 cups

INGREDIENTS:
2 tablespoons grape-seed oil
1 head of cabbage, chopped
2 onions, diced
6 carrots, diced
2 bell peppers, diced
4 cloves garlic, minced
1 bunch scallions, sliced
10 baby portabella mushrooms, sliced
2 (48 Oz) can low sodium V8 juice
1 (1 ¼ Oz) package Lipton onion soup mix
8 cups vegetable broth
1 (28 Oz) cans of diced tomatoes
1/2-cup balsamic vinegar
2 tablespoon lemon juice
1 teaspoon (EACH) oregano, basil, parsley
1/2-teaspoon red pepper flakes
Season with, pepper, parsley, or curry

DIRECTIONS:
1.   Heat oil in a stock pot over medium-heat.
2.   Add onions, bell peppers, mushrooms, carrots, and scallions.
3.   Sauté for 5 minutes.
4.   Stir in garlic and sauté for 1 minute more.
5.   Pour in broth.
6.   Stir in cabbage V8 juice, tomatoes, balsamic vinegar, lemon juice
7.   Bring to a boil and reduce heat.
8.   Stir in the spices, and onion soup mix.
9.   Simmer for 2 hours
