WE HAVE PARSNIPS AND APPLES SO A RECIPE ENJOY DAN:


OVEN ROASTED PARSNIPS AND APPLES by CHEF DAN:

Serves 4

 

INGREDIENTS:

 

2 pounds parsnips, (1 to 1-1/2-inches in diameter peeled and halved lengthwise

2 pounds apples, peeled and cut into quarters

2 tablespoons butter

2 tablespoons honey

2 garlic cloves, minced

1 tablespoon balsamic vinegar

1/2-teaspoon ground nutmeg

1/2-teaspoon ground allspice

Sea salt and freshly ground black pepper, to taste

Garnish with fresh mint or basil

 

DIRECTIONS:     (PRE-HEAT OVEN TO 475 DEGREES)

 

1.   Melt butter in a sauce pan over medium-heat.

2.   Stir in honey and balsamic vinegar.

3.   Stir to combine, set aside.

4.   Place the parsnips and apples into a bowl.

5.   Toss with butter mixture, garlic, nutmeg, and allspice and a pinch of salt and pepper

6.   Spread out evenly on a baking sheet.

7.   Bake in pre-heated oven, stirring occasionally, 30 minutes or until parsnips and apples are tender and browned.

8.   Garnish with fresh mint or basil.
