QUINOA WITH LOTS OF SPICES ENJOY DAN:


                    QUINOA MOROCCAN STYLE by CHEF DAN:

Serves 4

 

INGREDIENTS:

1 tablespoon olive oil

1 onion, cut into chunks

2 garlic cloves, minced

1 tablespoons smoked paprika

1/2- teaspoon EACH ground black pepper, coriander powder, cumin powder, turmeric powder, ginger powder, chipotle chili powder

Pinch of saffron

1-1/2-cups quinoa

2 cups vegetable broth

1 tablespoon lime juice

1/4-cup toasted pine nuts

1/4-cup dried sour cherries, soaked in hot water for 5 minutes.

A handful fresh basil

 

DIRECTIONS:

1.   Heat the oil in a sauce pan over medium-high heat until bubbling.

2.   Add onion and sauté for 4-5 minutes.

3.   Add garlic and spices and sauté for 1 minute.

4.   Add quinoa, vegetable broth and lime juice to the pan.

5.   Bring to a boil, stirring for 1-2 minutes.

6.   Reduce heat, cover and simmer for 20 minutes or until the broth has completely absorbed into the quinoa.

7.   Add the toasted pine nuts and the sour cherries.

8.   Stir to combine.

9.   Garnish with fresh basil.
