HEALTY POP CORN CHICKEN ENJOY DAN:


BUTTERMILK POPCORN CHICKEN BAKED by CHEF DAN:

Serves 4

 

INGREDIENTS:

 

1-1/2-pounds chicken tender

2-1/2-cups buttermilk

2 tablespoons butter melted

4 garlic cloves, lightly crushed

4 cups Panko

3 tablespoons TABASCO green pepper sauce

1 teaspoon smoky paprika

1/2teaspoon dried thyme

1/2-teaspoon dried oregano

 

DIRECTIONS:                           (PRE-HEAT OVEN TO 400 DEGREES)

 

1.    Combine buttermilk, garlic, TABSCO sauce, paprika, thyme, oregano and salt and pepper, in a bowl and stir until combined.

2.    Rinse chicken and pat dry.

3.    Transfer to a baking dish.

4.    Pour buttermilk mixture over chicken and refrigerate for 12 hours or more.

5.    Place a metal sack inside a baking sheet.

6.    Place Panko crumbs in a shallow dish seasoned with salt and pepper.

7.    Remove chicken from buttermilk mixture, and press in Panko crumbs, turning to coat completely and pressing crumbs into chicken.

8.    Transfer the chicken pieces to the metal rack.

9.    Drizzle melted butter over the chicken pieces.

10. Place in pre-heated oven and bake for about 35-40 minutes or until internal temperature is 160.
