BIG "G" GAVE ME A CASE OF PEPERORNI ENJOY DAN:


PEPPERONI SOUP FROM BIG “G” by CHEF DAN:

Serves 20

 

INGREDIENTS:

2 tablespoons olive oil

5 pounds pepperoni

14 cups beef broth

1 (28 Oz) can tomato sauce

1 (28 Oz) can diced tomatoes

18 potatoes, diced

8 onions, chopped

4 garlic cloves, minced

3 teaspoons salt

2 pounds macaroni, cooked

1 tablespoon EACH cumin, smoked paprika, mesquite seasoning, Cajun powder

 

DIRECTIONS:

 

1.   In a stock pot over medium-high heat add onions, pepperoni, and sauté for 5 minutes.

2.   Add garlic and sauté for 1 minute.

3.   Add all the ingredients except macaroni and bring to as boil.

4.   Reduce heat and simmer until the potatoes are done about 40 minutes.
