ROASTED APPLES AND TURNIPS

INGREDIENTS:
3
medium turnips, peeled and cubed
3
medium sweet potatoes, peeled and cubed
3
Granny Smith apples, peeled and cubed
1
cup tart dried cranberries
1/2-cup
dark black sugar
2
tablespoons apple cider vinegar
2
garlic cloves, smashed
Cooking
spray
2
tablespoon butter, cut into small pieces
6
fresh thyme springs
DIRECTIONS:
(preheat oven to 350 F)
1.
Combine
the first 7 ingredients into a baking dish sprayed with Pam.
2.
Top
with butter and fresh thyme.
3.
Bake
for 1-1/2-hours, stirring after 45 minutes.
