CROCK POT DOUBLE MEAT TEXAS CHILI ENJOY DAN:

         CROCK POT DOUBLE MEAT TEXAS CHILI by CHEF DAN:
Serves 8

INGREDIENTS:
2 tablespoons vegetable oil
2-pounds beef stew meat
2 pounds ground pork sausage
2 onions, diced
2 bell pepper, diced
6 garlic cloves, finely chopped
1/4-cup chili powder
2 tablespoons EACH cumin powder, and chipotle powder
1/2-teaspooon EACH dried oregano, sugar, and cayenne
1 (46 Oz) jar spicy V/8 juice
1 cup strong brewed coffee
1 (28 Oz) _ can diced tomatoes
2 (10.5 Oz) cans ROT*EL hot tomatoes
1 (14 Oz) can tomato sauce
2 (15 Oz) cans kidney beans, drained and rinsed
2 jalapenos, chopped
 Sea salt and freshly ground pepper to taste

DIRECTIONS:
1.   Heat the oil in skillet over medium-heat and when sizzling
2.   Add onions, bell pepper and sauté for 8 minutes.
3.   Add garlic cloves and next 6 ingredients and cook 2 minutes.
4.   Add stew meat, sausage, and season with salt and pepper.
5.   Saute for 8 minutes, breaking up the meat into small pieces.
6.   Transfer to a crock pot, then add V/8 juice and next 6 ingredients:
7.   Cover and cook on low for 8 hours.
8.   Serve with sour cream, scallions, and cheese.
