HONEY MAPLE ROASTED CARROTS by

Serves
4
INGREDIENTS:
2 pounds small rainbow carrots
2 pounds small rainbow carrots
2
tablespoons Irish butter, melted
2
garlic cloves, minced
1
tablespoon pure maple syrup
2
tablespoon honey
1
teaspoons EACH ground coriander, and tandoori masala
2
teaspoons cumin seeds
1
tablespoon sesame seeds
1
tablespoon EACH dried chives, and dried thyme
Kosher
salt and freshly ground black pepper to taste
DIRECTIONS:
(preheat oven to 450 F)
1.
Lightly
spray a sheet pan with Pam.
2.
Place
carrots in a bowl.
3.
Add
melted butter and next 7 ingredients: toss to combine.
4.
Spread
carrots out on prepared pan in a single layer.
5.
Roast
for 10 minutes, then stir to redistribute.
6.
Return
to oven and roast another 15 minutes, stirring every 5 minutes.
7.
Carrots
are finished when they are tender and some of the edges are caramelized.
8.
Sprinkle
with sesame seeds and herbs over the carrots and stir.
9.
Season
with salt and pepper to taste.
