SWEET POTATOES WITH PECANS AND SPICED MAPLE SAUCE ENJOY DAN:

SWEET POTATOES WITH PECANS AND SPICED MAPLE SAUCE by CHEF DAN:
Serves 4

INGREDIENTS:
3 large sweet potatoes, peeled and cubed
1/3-cup roasted pecans, chopped
3 tablespoons olive oil
2 tablespoons pure maple syrup
1-1/2-teaspoon paprika
1 tablespoon lemon juice
1/2-teaspoon freshly ground black pepper
1/2-teaspoon EACH onion powder, garlic powder. curry powder and chili powder
1/4-teaspoon cayenne pepper

DIRECTIONS: (PREHEAT OVEN TO 450 F)
  1. Place pecans on a baking sheet to toast until they smell nutty 5 minutes.
  2. Remove from oven and set aside.
  3. Place cubed sweet potatoes in a bowl.
  4. Drizzle with olive oil and remaining ingredients.
  5. Toss until the potatoes are evenly coasted with the seasoning.
  6. Spread on a baking sheet.
  7. Bake in preheated oven for 20 minutes.
  8. Then turn potatoes over with a spatula and continue baking for20 more minutes or until potatoes are golden brown and tender.
  9. Top[ with pecans.
