CHANTERELLE MUSHROOMS TOMATO AND BASIL FRITTATA FROM THE BARLOW
STAND AT THE FARMER MARKET

INGREDIENTS:
1
onion, sliced
3
fresh chanterelle mushroom, cleaned and sliced
1
tablespoon butter
1
tomato, diced
sea
salt and freshly ground black pepper to taste
3
tablespoons Parmesan cheese
3
eggs
1
tablespoon water
1/2-teaspoon
EACH garlic powder, onion powder, cumin, and curry blend
top
with arugula
DIRECTIONS:
(turn broiler on)

In a cast iron skillet oil over medium-high heat and when sizzling.

Add onions and saute for 3-4 minutes.

Add tomatoes, and season with salt and pepper, cook for another 3 minutes.

Remove from skillet and place in a bowl.

Beat eggs, water, 2 tablespoon Parmesan cheese, and pour into the skillet.
-
Pour in veggies and spices and cook on low heat.
-
After eggs are set but still runny.
-
Add remaining Parmesans cheese on top
-
Place in a preheated broiler and broil until golden brown and bubbly.

Top with arugula.
