SUNDAY MORNING TOMATO AND BASIL FRITTATA by CHEF DAN:
1 Frittata serves 2
INGREDIENTS:
1 onion, sliced
1-1/2-teaspoon
sunflower oil
1 tomato, diced
sea salt and
freshly ground black pepper to taste
3 tablespoons
Parmesan cheese
3 eggs
1 tablespoon water
1/2-teaspoon EACH
garlic powder, onion powder, cumin, and curry blend
top with arugula
DIRECTIONS: (turn
broiler on)

In a skillet oil over medium-high heat and when sizzling.

Add onions and saute for 3-4 minutes.

Add tomatoes, and season with salt and pepper, cook for another 3 minutes.

Remove from skillet and place in a bowl.

Beat eggs, water, 2 tablespoon Parmesan cheese, and pour into the skillet.

Pour in veggies and spices and cook on low heat.

After eggs are set but still runny.

Add remaining Parmesans cheese on top

Place in a preheated broiler and broil until golden brown and bubbly.

Top with arugula.
